Some days the food fight just isn’t worth the fight. They get sick of sandwiches with chips and an apple, and frankly I get sick of making it. I decided this year I wanted to step my lunch game up, making it more enjoyable for everyone but still ensuring they were getting some nutrients out of the deal. Here are a few I came up with (and they’ve been a hit so far)!
Grilled Cheese Sticks with Marinara Dipping Sauce
Make a traditional grilled cheese sandwich, slice into strips and pack with a side of marinara. Add a side of fruit for a balanced meal.
Wrap it Up
Anything you can put on a sandwich you can put in a wrap: PB&J, lunch meat and cheese, and even meatballs or chopped steak. Cut it in half and add some baby carrots on the side for added crunch.
Chicken Skewers
Thread grilled chicken and pineapple chunks on skewers, add their favorite dipping sauce and a side of rice. This can easily be modified to fit their tastes and dietary needs.
Mixed Munchie Grab-Bag
This is one of my favorite meals and the kids love the variety too. The possibilities are endless but some choices include: grapes, squares of cheese, salami, pretzels, cucumber slices, almonds, olives, a hard-boiled egg, and trail mix. Mix and match their favorite munchies for a well balanced lunch that’ll keep them full till dinner.
A fun way to package this one is to fill cupcake liners with assorted items and store them all in a large container.
