I don’t know about you, but watermelon is one of my favorite summer fruits. It just screams summer and I try to find as many ways to enjoy it as I can. Simply slicing into wedges and eating it from the rind works just fine, but here are some tasty ways to make watermelons treats for everyone to enjoy.
Easy Slushies. All you need to do is cube up and remove the seeds, if any, from a sweet watermelon and add it to your blender with some ice! If you like it a little sweeter, add some sugar to taste, pour, and enjoy.
Popsicles. Using dixie cups and popsicle sticks, add 3 cups of cubed, seedless watermelon, 2 tbsp of sugar, ¼ cup water, and the juice of one fresh lime. Boil water, add sugar, combine with the watermelon and puree in your blender. Then add the lime juice and pour into the dixie cups and insert popsicle stick once partially frozen. Freeze overnight and enjoy! Makes about 8 popsicles.
Grilled watermelon salad. Yes, you can grill watermelon, but brush the it with olive oil first. Make sure the wedges are cut thick with the rind removed, and only grill for about 2 minutes. Place over a bed of arugala, top with feta cheese, and drizzle it with some balsamic vinegar. Yum!
Watermelon Aqua Fresca. For a refreshing summer drink, get your blender out and put in about 2 pounds of cubed, seedless watermelon. Add 1 cup of cold water, 1 tbsp of agave nectar, and 2 tsp of lime juice. Blend until smooth and garnish with fresh mint or lime wedge. Makes 4 servings.
Spicy wedges. Cut watermelon into small wedges, rinds removed, and spear with a toothpick. Combine cayenne powder, salt, finely grated lime zest, and sprinkle over watermelon wedges. Serve as an easy, but spicy appetizer for your next picnic.
With watermelon being in peak season from May until August, now is the time to experiment and try some exciting ways to eat this wonderful summer fruit.
